How to Make It:

  1. Prep the Beans: Drain and rinse your black beans. In a small bowl, lightly mash half of them with a fork to help the wrap stay together.

  2. Soften Tortilla: Microwave a tortilla for 10 seconds so it’s easy to fold.

  3. Layer: In the center of the tortilla, spread a spoonful of mashed beans. Add a handful of cold shredded chicken, whole beans, shredded cheese, and lettuce.

  4. The Fold: Fold the bottom up, then tuck in the sides and roll tightly (like a burrito).

  5. Eat or Prep: Enjoy immediately! These stay great in the fridge for up to 2 days, making them a perfect EBT-compliant cold lunch.

Bon appétit!
