How to Cook It:

  1. Heat Up: Preheat your oven to 200°C (400°F).

  2. Chop: Slice the smoked sausage into rounds. Peel and cube the potatoes into small bite-sized pieces. Chop the peppers and onions into chunks.

  3. Season: Toss everything onto a large baking sheet. Drizzle with a little vegetable oil (or butter) and sprinkle generously with the Italian seasoning, salt, and pepper.

  4. Roast: Bake for 20 minutes, then use a spatula to toss the ingredients so they brown evenly.

  5. Finish: Bake for another 15–20 minutes until the potatoes are soft when poked with a fork and the sausage is slightly crispy.
